Meet Billecart-Salmon In 1818, Nicolas François Billecart and Elisabeth Salmon tied the knot. Inspired by their shared passion for wine, they established Maison Billecart-Salmon in Mareuil-sur-Aÿ, their hometown. Shortly after that, Nicolas François partnered with Louis Salmon, Elisabeth's brother. Nicolas François managed the business operations, while Louis, an enology enthusiast, focused on crafting exceptional wines.
To this day, the house is still family-owned and operated. In 2019, the dynamic Mathieu Roland-Billecart, representing the seventh generation, took over the estate's management. Over the past two years, he has worked to refine and challenge traditional methods, striving for perfection. Florent Nys, who became cellar master in 2018 after 13 years of training, now oversees production.
