The grapes were handpicked and whole-bunch pressed, with the must settled overnight. Minimal sulphites were added at crush to promote natural fermentation from indigenous yeast, with no further additions. Once fermentation began, the juice was racked to barrel to complete fermentation on the skins. The wine then underwent an extended barrel aging process for a total of 30 months.
