This beauty comes from the oldest Sauvignon Blanc vineyard in South Africa, 'The Amos Block'. Certified organic by Eco-Cert, this is one of the most special vineyards in the entire country. The idea was to move away from the usual fruity style of Sauvignon, which brought their winemaker to use several fermentation and aging methods, including tank and older oak. It is fermented with both natural and inoculated yeast as well as cold and warm temperatures. A portion also underwent skin contact, giving nice texture.
