    Named after Shiraiwa, renowned for its pure snowmelt water, this junmai daiginjo is crafted by Richard Geoffroy, former Chef de Cave at Dom Pérignon. Blending over 20 sakes, including reserves from past years, creates a rich and intricate profile destined to mature beautifully over the next decade. Ideal pairing: raw scallops with yuzu vinaigrette.

    IWA 5 Junmai Daiginjo Genshu Sake is a Japanese sake known for its expressive, dynamic, and balanced qualities. Crafted by Richard Geoffroy, the former master blender at Dom Pérignon, this sake uses a unique blending method involving three rice varieties and five yeast strains, including two wine yeasts. The outcome is a complex sake with a long finish and flavors that are novel in the sake world.
