The husband and wife co-owners of Kaetsu brewery both come from a long lineage of sake brewers, but have chosen to buck tradition and produce powerful, bold sakes atypical for their region. Intense aromatics of pistachio and white chocolate are followed by ripe melon on the palate and a crisp finish. Despite these dessert-like characteristics, there is also a savory element that makes this sake an excellent pairing with meat like duck, fig glazed pork tenderloins, or blackened fish.
